The girls have started laying again, so I can now make desserts that use a lot of eggs…like this Coffee Cloud Cake which uses 6 eggs. It smelled amazing while it was baking. Can’t wait to have it for dessert after our scampi dinner (did you know that “scampi” means shrimp? So, calling the dish “shrimp scampi” would be silly).
If you were in NZ, you’d make pavlova!!

Yvette, I’ve been intrigued with this dessert…some recipes ask only for egg whites while others use both (yolks for inside). What is your recipe like?
